Grilled Salmon With Avocado Salsa

This recipe is a great option for someone with diabetes as it is low in carbohydrates and high in healthy fats and protein. Ingredients:

  • 4 salmon filets
  • 2 ripe avocados, diced
  • ½ red onion, diced
  • 1 large tomato, diced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions:

Step 1: Preheat the grill to medium-high heat. Meanwhile, season filets with salt and pepper.

Step 2: Grill salmon filets for 4-5 minutes on each side, or until fully cooked.

Step 3: While salmon is cooking, prepare the avocado salsa. In a medium bowl, combine diced avocado, red onion, tomato, cilantro, lime juice, and salt and pepper to taste.
