Salmon & Spinach With Tartare Cream

Prepare to be entranced with this delectable recipe! Salmon is a super-food when it comes to regulating your blood sugar levels (read more about that here!), and this is one exquisite way to get that Omega-3. Serve this savory fish with your favorite grains and/or roasted veggies! This dish only takes roughly 15 minutes to cook and makes 2 servings. 

Ingredients: 

  • 1 teaspoon sunflower or vegetable oil 

  • 2 skinless salmon fillets  

  • 250-gram bag spinach 

  • 2 tablespoons reduced-fat crème fraîche 

  • Juice ½ lemon 

  • 1 teaspoon capers, drained 

  • 2 tablespoons flat-leaf parsley, chopped 

  • Lemon wedges, to serve 

Instructions: 

Step 1: Heat the oil in a pan, season the salmon on both sides, then fry for 4 mins each side until golden and the flesh flakes easily. Leave to rest on a plate while you cook the spinach. 

Step 2: Tip the leaves into the hot pan, season well, then cover and leave to wilt for 1 min, stirring once or twice. Spoon the spinach onto plates, then top with the salmon. 

Step 3: Gently heat the crème fraîche in the pan with a squeeze of the lemon juice, the capers and parsley, then season to taste. Be careful not to let it boil. 

Step 4: Spoon the sauce over the fish, then serve with lemon wedges. Enjoy!
