Southwest-Style Turkey Meatloaf

If you want to cook for the whole family or are looking for a good meal prep recipe, this is the one for you. You can pair this mouthwatering meatloaf with roasted or mashed red potatoes, a leafy salad, or even mashed cauliflower as a nutritious potato substitute. This dish only takes about 15 minutes of prep time and yields 8 servings. 

Ingredients: 

  • Nonstick cooking spray 

  • 1 ½ lbs. lean ground turkey breast 

  • 1 cup quick cooking oats 

  • 1 large yellow onion, finely chopped 

  • 2 eggs, whisked 

  • 1 green bell pepper, finely diced 

  • ½ cup ketchup 

  • 3 cloves garlic, minced 

  • 1 tablespoon chili powder 

  • 2 teaspoons ground cumin 

  • 1 teaspoon ground oregano 

  • ½ teaspoon salt 

  • ¼ teaspoon black pepper 

Instructions: 

Step 1: Preheat the oven to 350°F. Coat a 9 × 5-inch loaf pan with nonstick cooking spray. 

Step 2: Add all of the remaining ingredients to a large bowl. Gently mix the ingredients until well combined. 

Step 3: Spoon the mixture into the prepared loaf pan, using the back of the spoon or a spatula to even out the top. Place the loaf pan in the oven and bake until a thermometer inserted into the center of the meatloaf reads 165°F, for 1 hour. Serve and enjoy!
